In many countries it is 25th of December, Christmas Day, when the main Christmas meal is prepared and eaten around the family table. Here in Barga, as in most of Italy it is in fact the day before, the 24th of December when people stay in their houses and the stress level of the chef in each family rises dramatically as they prepare for the traditional Christmas evening meal. The long established Christian tradition in Italy dictates that the Christmas meal on 24th December should be based on fish but it is also possible and acceptable to eat other dishes although meat is generally frowned upon.
One of the classic dishes of Italy is of course, lasagna and here it’s not a case of going out to the local supermarket and buying a packet of lasagna or pulling one out of the deep freeze, it has to be made by hand.
